Try this DHA-rich recipe from registered dietician Elizabeth Somer that is fit for spring!
Minty rice, orange and pomegranate bowl
4 cups cooked brown rice
½ teaspoon salt
1 heaping tablespoon finely grated orange peel
½ cup orange juice (Try Omega Orange Juice fortified with algal DHA [http://www.genesistoday.com/products/omega-orange])
½ cup champagne vinegar
1 tablespoon freshly ground black pepper
2 ½ cups orange sections (approximately 3 oranges, peeled, sectioned and cut crosswise into halves)
⅔ cups pomegranate seeds (use dried cranberries when pomegranates are out of season)
2 tablespoons chopped mint
¼ cup toasted slivered almonds
Place rice in a medium bowl.
In a small bowl, whisk orange peel, orange juice, vinegar, oil, salt and pepper. Pour over rice and blend well.
Add orange sections, pomegranate seeds, mint and almonds. Toss gently until well mixed.
Makes approximately six 1-cup servings.
